    The two employees differ concerning a work issue but disagree.

    1 big Sardine Fish

    1 big dried fish

    Bitter leaf

    Palm oil 

    Cocoyam

    Salt 

    Procedure for Preparing Bitter leaf soup

    Step 1

    Pound the pepper in a molter

    Pour the cocoyam in a pot and cook till it is tender.

    Thereafter, peel the back of the cocoyam and pound in a molteruntil it is smonth.

    Pour it in a plate and keep aside

    Step 2

    Boil the meat, kpomo, stock fish and sardine fish together in a pot.

    Add seasoning cubes, pour adequate water and start cooking.

    Once it is done, your sieve from the water and keep aside.

    Step 3

    Put dried fish in a bowl, wash and add water to soften before removing the bones from it.

    Subsequently, clean and remove the bones. You can use a brush to clean the fish before removing the bones by breaking the fish into pieces.

    Then, break into pieces and keep aside

    Step 4

    Pour the water from the boiled meat/sardine fish/stock fish/kpomo into a new clean pot and put on fire.

    Gently pour the water so that the bones don’t enter the pot.

    Next, add grinded crayfish, pepper and ogiri (Locust beans).Bring to boil. 

    When it boils, add the dried fish, the sardine fish, stock fish, kpomo and meat.

    Step 5

    After 10-20mins depending on the heat from the burner, add the cocoyam into the pot and add palm oil.

    Allow to cook for a while. Then add the bitter leaf. The bitter leaf must be properly washed.

    Cook till the cocoyam is done and the bitter leaf is tender.

    Step 6

    Add seasoning cubes (like Maggi, Knor, Doyin, Chef, Gino, Ajino moto, etc) and salt to taste.

    After some minutes, it is ready.

    Step 7

    Serve with any Nigerian swallow like Semo, Akpu, Amala, or Pounded yam.

    Gently jolt the pot to evenly distribute the colour. When it starts to turn colour, pay adequate attention because the process is very quickly.

    You also need to look out for a dark or amber colour. The heat should be high and reach 280 degree Celsius.

    How do you know it is ready? Here, use your nose to perceive a slightly pleasant smell.

    Step 5

    Subsequently, remove the sugar from the heat and immediately add cream or condensed milk or butter cream and stir with a long wooden dessert spoon.

    The sugar may bubble so you need a long wooden spoon to do that.

    If you are using butter cream, then add immediately and stir.

    Step 6

    Stir until it is fully mixed together. That’s it. You now have a smooth rich buttery homemade caramel.

    Procedure

    Step 1

    Wash meat thoroughly and boil until it is tender with the addition of little or no water (depending on your choice) and the stock.

    Thereafter, place a clean pot on fir (medium heat), pour palm oil and heat up.

    Add sliced onions and tomatoes and stir until well fried.

    Step 3

    Grand the dried melon seed (egusi) into powder. Pour the egusi into step 2 and stir very well.

    Pour the meat and stock and continue to stir without letting it burn.

    Then, keep stirring and allow to cook for 10mins. Then add more water if you want the soup not to be too thick.

    Add the grinded pepper, crayfish, Uziza powder and allow to simmer for 20 – 30mins so that the Egusi will cook thoroughly.

    Step 5

    Add seasoning of your choice (Maggi, Knor, Ajino, Gino, Master chef, etc) and salt to taste and allow to cook for some time.

    Step 1

    Slice cabbage after washing it and pot in a pot, add salt and allow to boil for 10 minutes.


    Also reduce the heat to medium-low and simmer until it is soft.

    Remove cabbage and drain in a separate bowl.

    Step 2

    Heat the canola oil (you can use vegetable oil instead) in a pan over the fire.

    Stir, add onion and garlic in the hot oil until the onion is cooked (about 5 minutes).

    Stir the fresh tomatoes into the pan, cover the pan to allow it cook for 10 to 15 minutes until the tomatoes is soft.

    Add water into the tomato paste in a bowl and mix with a spoon until smooth; then pour into pan.

    Mix properly and cover the pan for 5 minutes.

    Stir the drained cabbage into the mixture and cover the pan. Simmer the mixture for about 10 to 15 minutes until the sardine fish is soft.
